Pork and Apple Casserole

4 slices Belly of Pork or shoulder steaks boned
1 medium onion – sliced
2 sticks celery –roughly sliced
1 large cooking apple – peeled and sliced
6 semi dried prunes – roughly chopped (optional)
4 large mushrooms – sliced
1-2 cloves garlic – chopped
½ pint Hill Farm Bramley Apple Juice
1 tablespoon oil
2 bay leaves and some fresh sage leaves if available
